What a team!
MEET THE WORKING OWNERS:
Paul Davies - Head Barman who ensures that your cocktails are the best in newcastle. He believes that "Silo is a little shelter from a world of fast, pre-mixed artificial tasting drinks. A lot of our cocktails are inspired by the time tested classics from the dawn of refined drinking. This naturally demands much more time, love and money but the customer I’m sure, appreciates the difference".
David Cartwright - Head Chef with over 18 years experience in the industry, ensures your meals are from "highest quality produce and ensures that all dishes are prepared from scratch using predominately French techniques". He trained hard in Sydney for 4 years and came back to Newcastle to share his knowledge and passion for good food.
Therese Cubis - known as Tess to the regular customers and staff. She has over 12 years experience in the industry, has completed B. Psychology and is currently studying Masters in HR and Organsiational Development. Her role is Front Of House & HR manager, she believes "Every dining experience is special by providing great food and service. Good Staff training and motivation is important as the staff are the face of your business - treat them with respect and they respect you!"
Mark Seery - Managing Director of Silo Restaurant & Lounge & 25 years in the industry.Our vision is to provide our customers with a consistent, quality product delivered with high service standards. Investment in Staff training and development is our priority rather than big advertising budgets, or discount Tuesdays.
Mark personally handles all corporate functions and weddings,with the highest level of professionalism.

Silo Restaurant & Lounge makes the Good Food Guide 4 years running!
Silo Restaurant & Lounge scored 13/20.
“As one of Newcastle’s coolest venues, Silo Restaurant & Lounge is popular for everything from a casual lunch to a wedding reception. it is not surprising given the well stocked bar, crowd pleasing menu and sexy decor- with red bordello wallpaper, a sleek lounge area and harbour view. A seat outside is hard to beat on a sunny day, with a thin, crisp-base pizza to share. Margherita comes with chunky wedges of juicy tomato on top. Creamy goat’s cheese and asparagus tartlet makes a light start, as does a dish of tender, salted squid with cucumber and bright green wakame. Heartier mains may include roast Berkshire pork strip-loin, or deliciously flaky confit Dutton park duck with pea and porcini risotto and ,for contrast , a small and satisfyingly tart pile of freshly shredded red cabbage. Pear tartin with prune and Armagnac ice-cream and caramel sauce is syrupy sweet and sumptuous.”

Silo Restaurant & Lounge has been recognised twice in Restaurant and Catering Associations Awards Night .
Silo was the winner of the 2009 Best Contemporary Australian Restaurant
and awarded a notable mention for 2009 Best limited Wine List.
Congratulations to all the finalists, and thank you to all our staff and customers.
