MEET THE WORKING OWNERS:
Paul Davies - Co-founder and Head Barman who ensures that your cocktails are the best in newcastle. He believes that "Silo is a little shelter from a world of fast, pre-mixed artificial tasting drinks. A lot of our cocktails are inspired by the time tested classics from the dawn of refined drinking. This naturally demands much more time, love and money but the customer I’m sure, appreciates the difference".
David Cartwright - Co-Founder and Head Chef who ensures your meals are from "highest quality produce and ensures that all dishes are prepared from scratch using predominately French techniques". He trained hard in Sydney for 4 years and came back to newcastle to share his knowledge and passion for good food.
Therese Cubis - known as Tess to the regular customers and staff. As a co-founder, her role is Front Of House & HR manager, she believes "every dining experience is special by providing great food and service is essential to gain respect from customers and those in the industry. Good Staff training and motivation is important as the staff are the face of your business - treat them with respect and they respect you!"
Mark Seery - Founder & Managing Director of Silo Restaurant & Lounge & 25 years in the industry.Our vision is to provide our customers with a consistent, quality product delivered with high service standards. Investment in Staff training and development is our priority rather than big advertising budgets, or discount Tuesdays.
Mark personally handles all corporate functions and weddings,with the highest level of professionalism.
